The planes are flying in the ridge lift produced by the paddles held by the pilots. In other words, as the plane flies, the pilot chases the plane, positioning the paddle under the plane to keep the plane in the air rising off the paddle. For more info on how the plane works, see:

The easiest to fly is the paper tumblewing. Plans are at tw<dot>any<dot>to or go to instructables<dot>com and search for "walkalong glider".
