  • I made some last night. I wish I saw your video before hand. I used shortening instead of butter but I think I would have preferred a butter pastry.

    Admittedly, I did not use your dough recipe but one of the problems I had was that I found that the dough became tougher as I combined the scraps from the cuttings and re-rolled it out. Have you tried using (egad) a tortilla press? I was even considering rectangular ones. Those circles require the maximum amount of re-rolling

    That is not how you make the pastry . I am jamaican and know that you dont handle the dough so much because the fat need to be made into layers - this makes it lovely and flakey !

    haha curry powder ? That's not how you make it yellow you silly woman. You need yellow coloring powder or accent !

  • @Jrockfangirl12 Hey, thanks for watching. The beef really makes quite a bit, but the pastry probably makes about 12 or so, depending on the size of the patties you make. I usually do a double batch on pastry so I can make a lot. The trouble with making them is that everyone wants to eat them, so you have to make extra for yourself! Enjoy!

  • having lived in miami most of my life..i enjoyed a cuban coffee and a jamaican patty.. now that i live in new england..patties are 1.50 per patty and not available everywhere. i am hoping they come out with a familiar taste. my plus to this is that i can use a high grade of ground beef...and use a healthy heart margarine or butter than a lard mix as in commercial patties.thank you so much

I will be trying this recipe, cause my family loves beef patties, im canadian too but i live in arizona! and theres none here. but i love the ones from bathurst station in toronto, i think you need more curry in the meat and it should be refrigerate the dough overnight.   • @fishandfestival I myself am a very white looking professional chef. I bet I can make better Indian food than most Indians. I may not speak a bunch of languages fluently but I can cook the food fluently! You really can't tell what a persons nationality is by how they look or even sound these days. FYI Canadians and Americans are no closer than a Jamaican and an African. They can look look alike to the untrained eye but they are very different.

  • It looks good but I would have a lot more curry to the dough. My grandmother also would refrigerate the dough for a couple of hours or overnight as this will darken the color of the crust as a well as make sure the soices are thoroughly absorbed in the crust.

  • @Hervinbalfour Hey thanks for watching. Ya I think I might up the curry content in the pastry, it needs more flavour I think. And as for the chilling yes for sure it's good to let rest in the fridge, though I sometimes get impatient and want the patties faster. But I'll have to try letting it go overnight and see if it makes a difference, my guess is it probably does. Thanks for the advice, it's always awesome to get tips from people.

  • @rustlecompton I learned a trick from my grandmother in Jamaica. Make your dough and filling before you go to bed and when you wake up in the morning assemble everything together.

    Like yourself I get excited and want to eat them right away but I noticed the difference when I rush the crust. I still am trying to perfect the crust. Not the flavor but the texture of the crust. I still can't get them as a flaky as my grandmother. :-(

  • @rustlecompton No, Thank you! I'll have to try it. There's a corner store at Bloor and Ossington called "lazer" I believe. They make curry goat beef patties. So good especially with cocoa bread.

    Question though. Did you give the patties an egg-wash on both sides when cooking?

  • @doubledutchbus Hey cool I'll have to check that place out! For the egg wash I just put it on one side. I'm sure you could try both sides, I just did it on one side because I didn't flip them through the baking process. Try it out, they're so good! :)

  • @rustlecompton What's the place called? I don't like the flakey variety they sell at No Frills by the Jaimacan Patty King brand. There is one that's called Halal or something at Sobeys/Price Choppers that have a really nice and firm pastry but yours is really more economical.

    Is the curry powder in the pastry mix necessary? I also thought they use eggs in the pastry mix.

  • @supercooled Hey thanks for watching. Hmm the place in Toronto, not sure, but I should be bikinghome past there so I'll let you know. Ya I prefer to make pastry instead of buying, mainly because it is less money. The curry powder give it a flavour that you need to the patties, otherwise it's just like making english dumplings or something. And for some pastry they use eggs to bring everything together, but this recipe just uses fat and water, much easier to deal with.

  • is it possible to use whole all purpose flour (pillsberry brand) and still get decent beef patties? I tried to make seitan with it (wheat gluten that tastes and feels like meat), but when I boiled the pieces it tasted kinda grainy. I don't know how to describe it, but when I ate it I could tellt that it was from flour. maybe it's the whole wheat taste

  • try a bit of turmic in the pastry instead of the curry powder it adds the taste i usally put the curry powder in with the beef i mean everyone to there own its just a suggestion! great vid!

  • Hey thanks for trying this out! I think maybe you should try a little more shortening, and also maybe knead it a little longer. It took quite a few times for me to get the pastry right, it's the hardest part by far. Keep trying, they'll turn out! :)

  • Hey, glad you tried them! Yes the pastry is always the hardest part, try adding more fat, not so much butter but other suet if you can, maybe try cooking them a little bit less so the pastry doesn't dry out. Let me know how that works for you, I know the most problems I had with making these was the pastry, it's all just through trial and error. :)

    i made this recipe last night and my boyfriend and i loved it!! they came out so good. my biggest fear was the crust, which came out nice, flaky, and puffed up a bit. just have to work on rolling dough *lol.

  • There is something very important you did not add in the mixing (shortening) you can't make pastry without shortening.I am a professional cook and I know that you can't make pastries without it.

    Your receipt just miss that.

  • lol add more curry power and a little more salt and use thyme in the paty itself used whipped butter too

  • It's not that hard you should give it a try, the reward is soooo yummy!

  • insted of mixing the butter in with your hands, stick the butter in the freezer for about an hour, then when you need it grate (with a cheese grater) the butter into the flour. Perfect pastry every time :)

  • Hey all, make sure you use either room temp butter, or cold, don't use melted. I did this the other day, and the pastry was not very good, it became really stiff and hard. So, make sure you use the right temp butter, it makes a big difference. :)

  • I hear there are people that use suet..everytime I make the patty...it comes out too tough...and the dough has NO flavor....what should I do?

  • the crust has no flavor when I do it....I followed this..but is there anyway to make it flakier..

  • i think that for the flavor you may just need some more salt into the mix. and for flakiness you should try more cold butter or suet as you recommended before, that should make things nice and flaky! let me know how it goes! :)

  • i think the other pastry would work, but then again it wouldn't be a beef patty with another pastry. try again, more butter, or cook it for less time, too much moisture is getting lost, that might help.
