@Afrotechmods Look up the difference between Radiative wireless power (think Tesla) and non-radiative wireless power (these guys). Most of your questions are explained on WiTricity's website.

Then with the monitor demo, there are devices being powered well over 1 foot away from the primary coil, in a position far off to the side where there would be almost no flux. I don't see how it is possible to power those gadgets in such a configuration unless you are feeding incredible amounts of power into the primary coil, or maybe there are extra coils hidden somewhere?

I've worked on wireless charging designs for many years and there are a couple of things here that seem odd... you said that the thin coil on the ipad is stuck right on the metal surface of the tablet. The metal should be absorbing almost all of the magnetic flux - how is it possible that the system can resonate?
