I gotta give a thumb down for the person who posted the video since the thrid section. CRISPY cookies, was cut out, most people probably didn't notice, but this is why i was watching it. All the science was cut out and what was needed to create a good crunchy cookie was not posted. TOO BAD. Good video

I made a double batch of the chewy exactly as it stated, except using ap instead of bread flour and less chips and the batter came out a little more loose than in the video. When I put them in the oven, they spread all over the place and turned out more like big huge crispy cookies. What did I do wrong?

Bread Flour is supposed to absorb more moisture . So by using All-Purpose the batter would be thinner because of the added moisture. Plus if you didn't chill the dough that could be a possibility too. I made the Chewy and mine turned out EXTREMELY chewy. Good Luck!

i THINK cake flour has less gluten in it therefore making it light and fluffier than normal flour.

My husband and I have made the chewy ones on several occassions and they are quite good. Next up will be the puffy ones with the extra cake flour we used for the blueberry buckle (another "Good Eats" episode).
