This was amazing to watch. Fingers easily prone to being chopped off, they are not even clawed at all. No onion slit the other way, nothing. Technique was not refined, and the sheer slowness of the chopping was impressive.
Sorry but this was slow and sloppy technique. I've seen second week catering students do a far better job. Apart from being slow, your technique in places is actually dangerous.
TERRIBLE technique. It wouldn't surprise me if this bitch is missing fingers by now. Not only is she unsafe here, but she's slow and sloppy at the same time. It's a unique combination of awful bits wrapped up in overconfidence.
agreed, terrible video in general. but the easiest way to cut an avocado in half is how she showed you, just as long as you are comfortable with your knife skills, otherwise it can get gruesome. and was it me or did she seem to be on coke? fidgiting and sniffles?
agreed, she doesn't demonstrated the "claw" which would protect her fingers. Aslo cutting the avocado-you cut cut your hand if the knife slips if you do this they way she shows it.
You dont have to be a writter to have common sense. It is scary the way she uses the knife, and even more scary that she dared 'teaching" the masses on how to cut. Slicing the avocado while on the hand, and taking the slippery pit off the knife with the hand ...DANGEROUS!!
if you cut like that you will lose fingers. you need to keep your knuckles out and finger tips tucked under, and use your knuckles against the broad side of the blade as a both a guide, and protection. it takes a little getting used to, but in all of my years in the kitchen i have not cut myself doing it this way.
I bought an avocado. Had problems splitting it into two after slicing it round. Then had problems getting the seed out. Chopped the seed but it wouldn't stick to the knife. Cut my thumb after a few tries. DAMN. Had to slice the vege around, horizontally to expose more of the seed. After I finally got the seed out, I sliced the flesh as she described it but the spoon part doesn't work. Her avocado seems to be much softer. What's wrong with my avocado!
@noelpattern her knife looked like a bad western copy of the japanese usuba honcho which does not need much slicing to cut through most veges as it is thin and razor sharp. what im saying is that some of her techniques work if she have the proper knife. and i agree that the avocado slicing is particularly worrying
She's gonna cut off her fingers holding the food like that, she's crushing the food instead of slicing, and using the point of her knife way too much for someone wielding a santoku blade.
HEYY!!! Your supposed to where a cutting glove when you do that.. thats not how you "Properly" cut.. well i guess its the "unsafe proper" way to chop vegetables... lol im j/p.... sorry.. just felt like giving you/her shit.. they just always stress that at my work sooo much..

I thought you were supposed to keep the tips of your fingers tucked in.

when cutting a carrot you peel it and cut through middle then slice half circles to not waste like 25% of the carrot

My guess would be you didn't by a very ripe one. You want them to be pretty mushy when you buy them if you plan on using them the same day! HTH :)

Typical food writer. Doesn't actually know how to *do* anything but thinks it's ok to teach.

16 years I have been cooking on four continents, for the military.
I take her points about getting the veg the same sizes to ensure properly cooked.
But here knife training and cross contaminations is rediculous.
(1) the Knive is not sharp,
(2) she is pushing the knife instead of gliding, its like a slow motion chopping action she is doing, instead of slicing.
(2) her grips on the veg do not promote good health and sefety especially with the Avacado, she could have cut her wrist.
noelpattern 3 years ago 24
i got all paranoid thinking she'd cut herself while doing the avacado..

They didn't teach you to count in the military?? :p
fingerbib2000 3 years ago 4
I'd like to add to your list :)
(4- Because you skipped 3)
Cutting the onion you should have cut horizontally after cutting vertically, to ensure each piece is the same size.
(5)Its not a slit if your slice all the way through... that is a cut.
(6) Make me a fucking samich.
