I saw Flatley dance with The Chieftans back in 1985 when he was unheard of. Great dancer but he was just dancing in the old way (hands to the side) not flapping them around as in Lord Of The Prance!
Not looking someone in the eye doesn't mean ignoring him, especially in chamber music like situations where you can hear yourself well... don't listen with your eyes! They're obviously both very focussed (on that girl with the short skirt).
The second tune is also called The Wind that Shakes the Barley! I found this version in "100 Essential Irish Session Tunes" by Dave Mallinson (England 1995).

Uileann is Irish is elbow pronounced ulin. The bellows are pumped by the elbow. The craft of uileann piping almost died out. Thankfully there is a revival driven by Irish and some great French, Spanish and dare I say it Japanese Irish pipers. The sound of uileann pipes is almost spiritual to an Irishman's ear. (more so if he has a pint of Guinness in his hand). We need to get the Maoris on to them next.
WHAT THE HELL? I'm a Maori and just happen to be looking very seriously into buying a set of Uilleann Pipes or maybe even the vPipes (electronic version of the Uilleann Pipes). I can barely play the recorder and have never touched a bagpipe or uilleann chanter in my life - but I SOOO want to play them!

The original name was the Pastoral pipes then the Union pipes, the term Uilleann is actually quite recent and coined in the early 20th century.
