I found an easy way doing to doing to critical finish.

you see that colored gem beside the HP gauge? If it flashes red just press the R button on the enemy and then press R again to do the critical finish.

To get that gem to red easily, spam the R button attack while they guard it, that way the gem changes color really quickly to red
