If there are two situations one a skier on a slope of 60 degrees the other on a slope nearing vertical and both skiers slopes have an elevation change of 50m and a Force of friction of 0.25.

The first skier with the 60 degree hill would end up going 419.2m/s at the end were as the other skier would be going at 490m/s

Both situations had the same elevation change, so under your understanding of physics they should both be going the same speed.

All this really means is that slope has

Umm I think you forgot about friction, as the slope is increased your friction is decreased therefor increasing speed. ie if your slope was completely vertical or nearing vertical you would have little or no friction, on the other side of the coin if you had no slope you wouldn't move at all as all your force would be is friction. Considering your on snow friction is one of the greatest factors.

For example..

Take a skier at a stand still sitting on a slope with an angle of 60*.

@kitohol steepness doesn't matter, simple physics says only height matters as you are converting potential energy to kinetic energy. The max speed (ignoring air resistance) is the square root of (2*height*acceleration due to gravity).
