Yes, it does make the hexagons medallions thick - creating bulk and texture behind the hexagon and in the grand scheme extra warmth. Its a matter of personal preference - my personal view is that small hexagons do not need much quilting - I prefer to knot. If you are quilting larger hexagons you may prefer to have a 1cm seam allowance. Best to experiment with a small project to decide your preferred method. Hope this helps.
I'm just curious, because of the huge seam allowances on your hexagons, that makes them very thick. Doesn't this cause issues when you go to quilt them?

I gave up at first because I didn't know how to sew the third hexagon on to the two hexagons I sewed together (not in a chain but the first way you had shown it). In the video, when you sewed the third hexagon in a cluster, you bent the third hexagon so that it would go edge to edge with the second hexagon sewn? Thank you again for a great video!

its a shame this video is so fuzzy. It would be v helpful if for the demonstration the threat was a contrasting colour to the fabric - just to help see the actual stitch size etc.

Paper I use is 80 or 90gsm paper - if you are careful templates could be used more than once - hope this helps
