if you keep the rifle standing on the bipod on the ground, move your head around and look through the scope from different places, the crosshairs start moving around too

Changing position will change your POI if your scope does not controll parallax very well. If you have a high quality scope and rifle along with lots of practice under your belt, then you are right. In that case changing position should not change POI.
Great vid! I think when people discuss POI change, the are referring to inferior rifle/stock combos. The AICS stock without question eliminates any kind of position induced POI change. My HS Precision with alum bedding block free floated also eliminates this error. This POI thing is from the old-school days of wooden stocks, non-FF, non-bedded where pressure changes on the stock and different holds/positions stressed the barrel differently, thus shifting POI.
