    I really appreciate your wonderful recipes and the pain you take in making them. You explanation is very detailed and elaborate. I had a quick question.

    Is there a specific reason to use luke warm water for kneading the dough? I remember for the khasta kachori you had used chilled water for the dough. How does the temperature of the water affect the dough and the final crust of the kachori/samosa...

  • @k2s3p Kneading the dough with different water temperature gives a different texture to the crust.

    A typical Punjabi version of garam masala is: black & white peppercorns cloves malabar leaves mace blades black & white cumin seeds cinnamon black, brown & green cardamom pods nutmeg star anise coriander seeds

    garam marsala is just a mixture of spices.

    A very basic garam masala could be made out of cinnamon, cardamom, cloves and nutmeg.

    try using allspice it tastes a lot like graham Marsala.

    BUT REMEMBER, garam masala is a mixed spice, with cinnamon, cloves, black pepper, cassia bark, fennel seeds, nutmeg and cardamon seeds both black and green.

  • mango powder is also called amchur or amchoor, you will find it in most asian supermarkets.

    make sure fry the gulab jamun on low heat and make the dough soft if the dough is dry add little more milk.

  • If dough is too soft  then add some more flour otherwise keeping in the fridge will help.

    The filling was very nice, but I did'nt like my dough because it was 'nt crispy. I did 'nt use the semolina, only the all purpose wheat. Could this be the reason ? Also I replaced the oil for ghee... maybe better not ?

  • 1 cup = 236 mg and 1/2 cup = 118 mg

    A cup is equal to 8 fluid ounces (fl. oz or just oz).

    An ounce is approximately 29 milliliters so a cup is about 236 milliliters (NOT MG vassrini2001)

    ALSO, teaspoon and tablespoon are also official units of measurement.

    A tablespoon (tbs) is one half ounce so, 15 milliliters.

    There are 3 teaspoons (tsp) to a tablespoon (tbs) so a teaspoon is roughly 5 milliliters.

  • Does anyone know what oils you cook samosas in? I have eaten samosa rom the "Taj Indian Restaurant" in Copenhagen many times, and I cannot copy the wonderful lavour.. it tastes as if they were boiled in special oil, or that maybe there is ghee or butter in the batter... anyone know?

    so I did , and I did liek this too, guess what this the best , real recipe to it , then me wasteing 50 dollars on professional cook book recipe

  • Hard to get indian spices here in Poland :/

  • The only thing that would be difficult would be the mango powder.

    Most everything else is standard spices (at least in the US and especially in the Latin section of the supermarket)

    according to Wikipedia sooji is Kasza manna in polish.

    As far as garam masala, even in India all brands are different. I made and ground my own (uber-fresh). The only spice that might be hard to find in Poland would be cardamom, and you should find that as well.

    Find amchoor on the internet, and make the rest.

  • Thanks for sharing this awesome recipe. I tried it today and baked the samosas instead of frying them. I used the same proportion of oil and baked them on pizza pan after spraying oil on the samosas. I baked them on 400 for 10 mins eachside. Of course there has to be a lil difference than frying them, but its a lot better than DEEP FRYING. My husband liked them alot and said they tasted like patties. If they were deep fried, he would have hardly eaten 1 samosa bt I m happy he ate 4 of them :)

  • if you want to bake to avoid the oil, does not work because you will have to add the oil in crust lot more.
