One way is to make sure the slices are even buy either buying 'escalope' chicken breast or cutting it thinly and pounded it with a food mallet to flatten it out.
Or you can brine it in a salt/water solution for a couple hours then cook it. Salt water will force water to enter the breast, making it harder to overcook.

i have a problem though. when i cook my chicken breast, it always turns out a bit too dry. how do i make it so it is really tender and moist?
