It's more than a little annoying that we all end up consuming folic acid so that a few uneducated pregnant women can avoid neural tube defects in their offspring. While it's tragic that some (particularly white) babies end up with spina bifida due to their mothers' poor dietary habits it makes no sense to create an even larger problem by mandating adding folic acid to ALL Americans' wheat based foods. A product has to be at least 50% (or 51%?) whole wheat not to have folic acid added . Go USA!
All vitamins are toxic to a certain extent. If you don't take in more than 400 mcg of folic acid in a day, you're fine. Which means, don't take the pills if you're getting ANY folic acid from fortified food. Also, calling folic acid a "cause" of cancer is a little bit of an oversimplification, it really causes the body to be less likely to be able to prevent cancer.
I looked into this as well and its really a big issue. My thoughts are what if all the people who think they have a gluten intolerance are actually having a reaction from the amount of extra un-metabolized folic acid.. perhaps this is why sometimes gluten free cookies feel like they had gluten in them. Also about 35% of Americans have an issue with the MTHFR enzyme and cannot handle folic acid…
