Made the baked version of this Mac and Cheese a couple night ago and it was amazing, even reheated the next day. I traded out the breadcrumbs for crushed cheese and garlic croutons and it added a great complement to the cheese inside.
I made the stovetop one twice, it was not good eats. What am I doing wrong? The only thing I didn't do was cook it to al dente (I made my noodles more chewy) and took out the hot sauce. I also heard from people that they used half and half instead of evaporated milk. Does that make it taste any better? Also, the cheese melted kind of, but it just clumped and that made the dish overall taste pasty.
@PinkCircleO8 Sounds like your doing everything right. Maybe instead of the english cheddar you should try the velveta. I use that when I'm making it from scratch and it usually turns out good eats.
@PinkCircleO8 I didn't like it at first either so try this instead; mix the eggs, then add heavy cream (one of the $1 small containers is 8oz so just use about 3/4 of it), add the hot sauce for flavor (it doesn't make it hot so don't worry), back off the mustard to 1/4tsp, salt and pepper like usual but make sure it's a metal bowl. Place over a double boiler until it thickens to your liking, add to noodles and keep the heat just above low then add the cheese in small handfulls...continued

Make sure the bowl fits into the pot by the botton 1/4-1/3 of the bowl. Turn the heat to high to get the water boiling then drop to a simmer. Place the bowl with the ingredients on top then mix away! (use a wisk)
The hot sauce just adds the chili flavor without the heat. It's just there to round out the flavors.
The only mac I get from a blue box is Barilla elbow macaroni to make my own sauce with.

In Boston, whenever they play Video Games, it's typical of them to say they're playing Nintendo, even if they're playing Sega or Sony or Microsoft. In the Atlanta area, if they're drinking pop. they'll tell you they're drinking Coke, no matter the brand. It's just the way societies are, sensical or not.

That stuff is in the boxed version; people just never notice because they never bother to cook anything from raw ingredients. Just about every cheese sauce contains dry mustard, paprika, and onion powder.
They add flavor. The whole point of making recipes like Macaroni and Cheese at home is to avoid the bland, flavorless salt lumps that are processed/frozen macaroni and cheese. You should really welcome variety, it IS the spice of life.
My kids like hot dogs...Go figure..I'm a chef and spend all day making great delicious food and they want the Kraft blue box! Oh, well, That leaves more of the good stuff for me!

Normally you don't, but since he made the "glue" for it to stick to the cheese, he went ahead and rinsed it. Notice Elton didn't rinse the stove top version off.
i used to like box mac&cheese, but i really think it's disgusting now. The stuff my mom makes from scratch is much better and doesn't look like gloop when it's leftover. =D
