The only reason Jennifer Hudson seems to over-sing is because of her voice. It SOUNDS like she's over-singing, but when she goes into her belting range, the same range everyone else goes into singing this song, her voice sounds strained. It's just the tone of her voice, it has almost nothing to do with what she actually is doing.
