Toni did this in one take. They did all of Haley's shots first, and then turned the camera on her and did this one take. And it was so good they didn't go in for a closer shot, they left it as is. One of the most phenomenal takes in cinema I think!

Toni Colette's performance is absolutely brilliant; she shows not only talent here, but genius in my opinion - naturalistic, understated film acting at its very best (pay special attention to her reaction beginning at around 3:43). You interact with the world in a way that is familiar to you, and are simply ignorant of any part of reality that contradicts what you knew.
