@rwzal.....kosher salt is NON-iodized so it has a different taste than regular table salt. It doesn't need to be kosher. Kosher salt refers to the texture and that it doesn't have additives....it's used for removing blood from animal products to make them kosher, the size and surface area created by it's roughness works well in drawing out moisture.
Use any sea salt that's non iodized and all natural. It's pretty cheap at Italian stores varying from coarse to fine texture.
