It was called that because it was kept locked in the captain's cabin and only he could authorize it's use. To be "put in bed with the captain's daughter" meant to be strapped across a cannon and flogged with the cat o' nine tails.

There are many types of shanties, this one sounds like either a stamp and go shanty, or a forebitter. Btw, this video is real cool, nice work.

@chipples19 Most people refer to this song as a "capstain shanty" for raising the anchor. However, it's actually a "halyard shanty" for raising the sails. "Way hey up she rises" refers to the sail, not the anchor. LordDrako got it right in the video.
