hey chef john, i am a little skittish to put scones in a 400 degree oven, even for 15 minutes, in my oven, my scones burned to a crisp in about 5 mins. i know that we all have different ovens, but i was wondering on your input. sorry if this was anwsered before!
I've done already twice your recipe and they were very well... But I would like to know if you could give me the metric measures for all the ingredients as I guess I've some mistakes with the conversion... Thanks in advance.

One rule of thumb here, if I may. When working with dough, you will hear it said not to over work the dough. Now, you did well with the fold, but to get ANY dough to rise you must work the dough a bit to give it structure. The problem comes with adding too much flour. furn it about 4-6 times and then add the flour before you roll it. Baking powder will make it rise but without some gluten production, you'll have a flat gummy mess. If too much flour is incorperated you'll truly have Stone Hinge
I always talk about having tea and scones, but I've never actually had em! So I finally made em this evening! I used blueberries and tossed on a lemon glaze but used your methods! SOO easy to make and delicious! Thanks :D Your videos make people think I'm pro ^_~ lol
just a little tip, you should bunch the scones one against the other before you bake them so when they cook they bunch together and you rip them apart when they are done :)
Scones are best served warm, with clotted cream on top, with strawberry or raspberry jam ontop of that! Trust us scottish to find a fattening way to make something already fattening worse :p dont use marmalade :)
Omg, I just found these videos today and I've watched so many already. I am a personal chef and caterer, and even though I know most of these techniques I love these videos. Better than anything on the Food Network. You rock!!

'Scons' mate! That's our Aussie pronounciation also. 'Scones' sounds like a sort of skin problem or something, like 'Arr, the poor wee laddy had scones all over his arms' :-)
BTW, the wife of one of our previous state leader's (as well as being a senator) was famous for her Pumpkin scones. Ref. Florence Bjelke-Petersen
I'm from Scotland but I've never seen scones look as nice as they do! Maybe you can try making some haggis, neeps and tatties next. haha! Love your video's Chef John! :-)
But the person making it is American! Do you make Italian pasta correctly in Scottland? Do you make Sushi correctly in Scottland? NO! People may change they way they cook a foreign dish and it's TOTALLY ok. Seriously, it's ridiculous to complain about these things.
@ellelesrose of course we do, we have many people from italy living in scotland, who actually do come from italy due to both being in europe, and not your american usual of 'my great great great grandfather was italian' and btw its 'scotland' only one t my dear, you americans never learn do you? :)
Hahaha. A typical ignorant teen unaware of outside cultures. LOL
Cheeseburgers are everywhere. There are Mcdonalds on every continent. It doesn't mean the whole population eats it. Stupid. What do you eat besides scones anyway? haha.
@ellelesrose who is an ignorant teen? must be you because i'm not a teenager. sorry ellelesrose, america, and people like you are unaware of peoples outside cultures, I know this due to the fact of meeting many americans, how many people from the UK have you met? and why do you keep repeating yourself with scones? is it because you dont know any other UK cuisine? I'm actually lost in what your point is.I didn't mention mcdonalds anyway, I said cheeseburgers. *end of discussion*
I've lived and traveled all over the world silly. I'm the one lost in what YOUR point is. You don't allow other shapes for scones. Don't ignore what you said in the beginning. I have a cousin who is married to a Brit by the way. They never said I had to make round scones. Don't be such a douchebag.
@ellelesrose why are you starting with profanities? you're the one who started being all defensive at the start. I'm sure I believe you when it comes to living around the world, well I think it's utter nonsense. scones should be round. well done to your cousin I'm really happy for her, now go and carry on with your pathetic american dream of being the most dumbest nation in the planet.
Dumbest nation in the world created youtube and you are watching a video on youtube. Your hostility is more towards the US and not this scone video haha. Go vent on a political video dude. This is no place for haters like you. Don't even bother to create an account on youtube if you think it's made by the dumbest nation in the world.
Hate to break it to ya, but every nation has their batch of idiots. Not sure why you're so anti-american, or what your prejudices are doing in a video about scones......but okay....
Anyway, those scones look yummy...may try with blueberries...not really a current girl...
I made them a couple of weeks ago with walnuts and dates instead of currents and sprinkeld them with sugar and cinnamon....they are indeed delicious!! :) I love your recipes!! Keep them coming!
Chef John -- I don't know if you'll see this since you get 800 million comments, but I recently saw Alton Brown actually grate ice-cold butter into his dough. It was for a mincemeat pie crust. Does that work with your biscuit and scone doughs too? I thought it was interesting and might be easier for those who don't have a pastry cutter.
@fezan84 I saw that episode tonight, oh how I love sweeny todd :P, And sorry for butting in, but I teach an intro to pastry class, and both methods are perfect, as long as you have a crumb consistency and use frozen butter, it will come out perfectly.
@xdeathisrighttherex Haha yeap it was the episode from earlier tonight =D -- thanks a lot for your help! It really does seem like an excellent way to get very consistent butter bits throughout.
after you mix the dough in the bowl and put it on the board , don't pat them down like that just form it gently into a rough shape and cut them , the result will be a much lighter scone , also , for best results when you cut the scones if you can see visible bits of butter then you did it right.
great video this recipe reminds me of when if my cafe class a kids was making cheese scones and he was taking them out and her DROPED THEM we were so shock/sad cause the cheese scones we make are the BEST!
Clotted cream is nothing more than whipped cream...in Britain they serves the scones with the cream and jam between the two halves, the jam in the center, then the cream around it, mmmmmmmmm! Yummy!
@Shiaine Clotted cream is not whipped cream. It's made by heating unpasteurized cow's milk and then leaving it in shallow pans for several hours. During this time, the cream content rises to the surface and forms clots.
All you need now is some cream, jam and some nice breakfast tea. Clotted cream is like natural cream... from fresh milk... but you know that really. Scone Henge! genius! I'm gonna make one!
i'm embarrassed at how hard i laughed at "Sconehenge"

after you mix the dough in the bowl and put it on the board , don't pat them down like that just form it gently into a rough shape and cut them , the result will be a much lighter scone , also , for best results when you cut the scones if you can see visible bits of butter then you did it right.

The British are upset. You've released the secret of their teatime treat. I expect us to go to war very soon. Thanks Chef John
