  • hey chef john, i am a little skittish to put scones in a 400 degree oven, even for 15 minutes, in my oven, my scones burned to a crisp in about 5 mins. i know that we all have different ovens, but i was wondering on your input. sorry if this was anwsered before!

  • When I was younger, I lived in england(yes england, not scotland) for a year and had scones for breakfast everyday and HATED them. All I remember was how dry and hard they were for some reason. Chef John, you have forever changed my scone experience and I may just eat these everyday.

  • I feel strangely aroused when I watch this.

  • One rule of thumb here, if I may. When working with dough, you will hear it said not to over work the dough. Now, you did well with the fold, but to get ANY dough to rise you must work the dough a bit to give it structure. The problem comes with adding too much flour. furn it about 4-6 times and then add the flour before you roll it. Baking powder will make it rise but without some gluten production, you'll have a flat gummy mess. If too much flour is incorperated you'll truly have Stone Hinge

  • Scones are best served warm, with clotted cream on top, with strawberry or raspberry jam ontop of that! Trust us scottish to find a fattening way to make something already fattening worse :p dont use marmalade :)

  • As always I did enjoy and Cher Chef, you read minds... just yesterday I put heavy cream on my food shop list to make scones... because I miss my good friend from England Jane who always makes the best scones of all... and everything she touches turns to gold because she does it with love... unlike the Midas touch, you can eat the gold she makes! have fun in vegas... split thoze ates!

  • This recipe is great. It is very similar to the scottish rock cakes. The scottish scones are normally plain or savoury in a circle or triangle form. I have never had them with fruit but they are nice sliced through the middle and spread with butter. Do you have a brew going (tea?). I am hungrey....

  • Chef John -- I don't know if you'll see this since you get 800 million comments, but I recently saw Alton Brown actually grate ice-cold butter into his dough. It was for a mincemeat pie crust. Does that work with your biscuit and scone doughs too? I thought it was interesting and might be easier for those who don't have a pastry cutter.

  • @fezan84 I saw that episode tonight, oh how I love sweeny todd :P, And sorry for butting in, but I teach an intro to pastry class, and both methods are perfect, as long as you have a crumb consistency and use frozen butter, it will come out perfectly.

  • after you mix the dough in the bowl and put it on the board , don't pat them down like that just form it gently into a rough shape and cut them , the result will be a much lighter scone , also , for best results when you cut the scones if you can see visible bits of butter then you did it right.

  • Clotted cream is nothing more than whipped cream...in Britain they serves the scones with the cream and jam between the two halves, the jam in the center, then the cream around it, mmmmmmmmm! Yummy!

  • @Shiaine Clotted cream is not whipped cream. It's made by heating unpasteurized cow's milk and then leaving it in shallow pans for several hours. During this time, the cream content rises to the surface and forms clots.
