  • Just bought the book the other day at the anime expo. So far I did the appl bunny and hard boil egg chic. :D it was fun! Got a bento box and chopsticks with it.

  • I love the video. I frequent the hibachi restaraunts in my area alot. I have figured out that this is the way they make the soy. They also use a butter substitute. Can you tell me if this is correct? Im trying to replicate it at home, but when i did what the lady did in the video, the soy tasted burned. I used kikkoman soy and mirin, and gekkikan sake. I also noticed some palces sauce seems a little red. could this be a sherry or bourbon used instead of mirin? I like to use it on steak.

  • can i put the mirin in two stages? or pu it just after my desired thickness??? i mean if i put it at the beginning wouldn't the alcohol vaporized leaving just the bitterness of the mirin? please answer! i wana know! teriyaki is kinda expensive in our country T_T

    the alcohol in the sake is what becomes bitter in cooking (anything), boiling the alcohol off is the golden rule when cooking with any spirit. The Sugar will moderate the bitterness of the Mirin too...

    this is why you flambe brandy on crepes suzettes and deglaze a hot pan with wine.

    Anytime you add alcohol, you have to have the dish on high heat to allow the alcohol pecentage to biol off. Alcohol has a lower boiling point than water, so you get the flavour of the beverage without the bitterness of the anabolic reaction (or something like that) from the alcohol.

    remember the strongest spirits are only 40% alcohol, the rest is pure flavour.

  • not a bad video except for the part where she broke the golden rule of cooking... using the same unwashed cutting board and knife for cutting vegetables after cutting meat

  • @siewhouk All the food will be grilled though so in this case it doesn't matter, I mean the chicken is touching the vegetables on the skewer to begin with ;)

  • @siewhouk In a way i don't really matter if the two ingredient goes in the same dish. But if it goes in different one's that's a problem even still it's just a sanitary procedure used by restaurant. I've cook and use the same cutting board to cut meat and veggies and I'm still alive and never got sick cuz of it.

    if she was serving the leeks raw you would be correct, but as its being cooked adjacent to the chicken, I don't think it matters in this case.

  • Konnichiwa!!! I love Yakitori Its one my faves..Its also realy tasty if u dip it in mayonaise sauce!!! I love japanese mayonaise sauce that stuff is great on most things to me..Yummy!!! Cute manga characters and the adorable fox...Kawaii! That would have been somthing I would have put together if I made a cook book.I love Japan .I wanna go! Sayonara!!

  • Watching this video has finally given me the push I needed to finally go out and buy this cookbook. I didn't mind the yellow captions, but if they were in bold, it would be easier to read.
