I always try to sneak vegan/vegetarian recipes in but my boyfriend is allergic to legumes, tofu, soy, eggs, and probably other things that I haven't even tried on him yet & his Mom is also allergic to bananas and some other stuff too so I've pretty much given up on trying to get him to eat less meat. Although I made a potato and leak bake the other day and he didn't die so there's hope yet.

Aha,when I saw the title, I thought it would be a microwave cake in a cup! Looks like a good recipe, I love coconut sugar :) But if I'm going to turn on the oven , I think I would bake a whole tray....can the recipe be multiplied to make 12?
@veggietorials I avoid microwaves :) mine lives in my garage. you can certainly use your microwave if you like-maybe cook it for a minute at a time. I have a nice recipe for cupcakes (a batch) on the website :)
@vegieheadadele oops, I guess I didn't express myself well in my previous comment :) I was glad it was NOT a microwave recipe. I was asking if there was a recipe for a whole batch that I could make in my oven, only because I wouldn't want to waste the electricity or heat up my kitchen (too hot in Hawaii!) to bake just one cupcake. But I checked out your blog and the CocoLime Cupcakes look divine. I will certainly be giving those a try. Thank you
@veggietorials oh sorry lovely!! yes i totally understand how hot it is there, i was there in november 2010 on the big island and maui- very warm!!! there would be no point for one lol :) yes give them a try- they are just as easy i promise!! Aloha! xxxx
@veggietorials You could always buy a microwave/oven (different than a microwave oven). That's what I use when I don't want to use my oven to cook (In Spain most houses don't have a/c or ceiling fans and it gets HOT). But it usually takes longer than my conventional oven.
My Mum has an Advantium Oven/Microwave that works superwell and also doesn't heat up the house (She lives in Bermuda), but I think that it's pretty pricey.
@bermyWHAT Thanks for the tip! I wonder if that is the same as what we call a convection oven? I will look into the Advantium brand. Hmmm, now that I think about it, I may be able to try the little counter top toaster oven I have...
