The way you cook asado is chop 4-5 medium Roma tomatoes, 1 med. sweet onion, 4 cloves of garlic and bay leaves. Saute on low heat until tomatoes turn to sauce. Then add your chicken or pork ( cubed or cut anyway you want). Cover and cook on low heat for 1 hour -- around 40 min for chicken. Yup. One hour. Stir occasionally to prevent anything sticking to the bottom of the pan. When meat is tender remove from sauce and set aside. Meanwhile continue simmering the sauce (remember low heat).
Simmer until sauce thickens and oil visibly separates-- this means your sauce is done. Set aside. Optional (Pampanga style: fry the meat until brown but not dry) Stir in the meat with the sauce. This is the authentic Pampanga way. Just to warn you, this recipe is not for those who are in a hurry. Enjoy!!
i really don't get it bakit iba ang asado sa kapampangan hindi ganito ang preparation. bakit alang nagpopost ng asadong baboy in kapampangan version..sarap ng asadong baboy sa mga piyestahan sa tarlac at pampanga...10/10 kudos!
@GeminideLeon30 Tama ka, masarap nga ang asado ng Kapampangan, kanina pa ako nag-hahanap din ng asado ng Kapampangan, wala din ako mahanap. Kapampangan asado is the best, sana may mag-post.
I'm sorry to say but that is not Asado. I've tasted the Spanish and Puerto Rican versions and they're miles away from your recipe. The closest version is the way the Pampanga people make it.
thanks i followed all the recipes and instructions.... in addition I add "star aniz " ( tama ba?^^), for a lil' bit of fragrance and taste..., uhm,,, paturo nman din kung papano ung LENGUA na may mushrooms ,,, please ^^
