Just because its operational enough to work to make promo videos, doesn't mean its fully operational. A lot goes into making sure a game will function across a variety of systems, with different sound and video cards, etc. Plus, I'm sure they aren't showing you the scenes where the software froze their system up and they had to reboot and lost all their designs.
