  • protip, use a spear of pickle instead off the celery, adds to the flavor of the drink, from what i understand it was originally used but then switched to bean and then celery because they are/were cheaper.

  • really nice video! It reminded me of the sesame chicken i tried to make last week, i somehow messed up with the batter and in the end i had pieces of chicken without crust what-so-ever and my whole wok filled with sticky batter-oil creme :(

    I'll try to get the consistency like yours next time.

    Also, why is it so important that the temperature never drops ?

  • @backstab84 this happened to me too. as you add food to the oil the temperature drops. the batter will drip off in the oil, sticking to the bottom of the pan. this is probably what you ran into. keep a pan in the oven on as low heat as possible and do it a couple at a time. then sauce it up when it's all done. it took a few times for me to get it right. good luck!
