I think the octopus, being (relatively) highly intelligent, started feeling the sharks out of curiosity, but soon found that holding it down long enough actually resulted in them dying (from a lack of oxigen) and in food for the octopus.

Being capable of learning, it must have seen it as a valid strategy for gather food.
