    i don't know about you guys, but to me this is one of the best basting and dipping sauces for Pork chops....

    Pork chops and apple slices or Pork chops with mustard glaze go really well

    and here you get the best of both worlds, with a little tang to it...

  • Both Carolinas use vinegar base sauces, but South Carolina is more mustard and vinegar and North Carolina is Ketchup and vinegar.

  • I'd really like to travel the country tasting different regional BBQ sauces before I get too old to chew my own food :)

    The only sauces that I can think of that I would avoid are New England white barbecue sauces (mayo based). Maybe I'll start on the east coast so I would have plenty of states to wash that nastiness out of my mouth.

  • Interesting take on the Carolina mustard sauce, John. The apples and brown sugar makes for a lot sweeter version than what I have ever seen. I'll have to try it. My recipe (I call it Cackalacky Sauce) is about 60% mustard, 35% beer with the rest being apple cider vinegar, a touch of ketchup, black pepper and a few spices.

  • I love the vinegar style sauces from the Carolinas, my best friends grandpa taught me about BBQ when I was a kid. How do you tell if you have enough vinegar in your sauce he asked.... he answered, stick your face over the pot, breathe deeply if you don't cough for at least 10 seconds you need to add more vinegar. :-)

  • It's North Carolina Chef John that this inspiration comes from. South Carolina is not known for BBQ. Those of us living in North Carolina really dislike the use of "Carolina" because the states are very different. For instance, in 2008, NC voted for Obama and SC voted for McCain. We have more in common with the Mid-Atlantic than we do with SC. There is no such place as "Carolina".

  • As a South Carolinian who has worked for a BBQer, Mustard-based are dominant in the midlands and lowcountry of the state (so Columbia and Charleston). The Upstate tends to be tomato/vinegar based. I don't think the lowcountry of North Carolina would use Mustard based, but I'm not sure. For my mustard sauce, I do the following: Proportions may vary according to taste. Yellow mustard Apple Cider Vinegar Brown sugar Worcestershire Sauce Salt Pepper Chilli Powder and other spices

  • OK Chef John... First off, props your the master. However, being born and raised in NC, raising and cooking hogs here I must say that there can be no twists on our BBQ sauce. Generally there isn't mustard in it (although there is sometimes) but there certainly is no apple in it. I know this seems overkill but BBQ and BBQ sauce are a bit of a religion here. That being said, you really should make your way out here and experience a pig pickin for yourself (with homegrown pork!!)

  • @shaynemcallister I'm from Chapel Hill (GO HEELS!). I know the vinegar based (no mustard) is from eastern NC but seems to be predominant across NC. I think sauces with mustard and other sweeter sauces come from the mountain region, but like I said the true Carolina sauce is strait vinegar based, no mustard

  • Love your videos, but please be careful stepping out - we southerners are a little proud of our cooking, especially BBQ. You mentioned you had never been to the Carolina's and I haven't been to China, but I love the food, I just wouldn't consider trying to teach someone how to prepare it. I realize you did say it was your take on the recipe, so you might get a pass. Get on a plane, and come for a visit, you won't leave with any recipes, those are handed down within families
