Another company in Europe had the name Soul Edge, and were copyrighted inside Europe only. That's why they changed it to Soul Calibur, so the entire series wouldn't be called different things in different places.
taki has also changed in the japan one u see that she has a shoulder top meanwhile in the europe version she doesn''t have one. and the speed is a little diffrent to the europe version is becauuse its faster compared to the japanese version speed is much slower.
if u see at the end the japanese says soul edge so the europe says soul blade.
also the eurpoe is P.A.L while the Japan is Americian.
nunchucks were illigal in any media form in the UK at the time of release of this game, namco thought it was a good idea to remove them from any PAL version of the game, i guess to make things simpler.
It looks like the weapon was slightly altered from a nunchucku with spikes on the end and chains, to a three-section nunchucku with no spike . Look at 0:23. It seems his face was edited too, apparently. Look at when he looks up under his hat.

So the only difference is the fact that Sophitia is bathing naked? Nice idea to do a comparison, but in a screen resolution that small it is hard to even tell. The UK version could be button hacked to show the nude Sophie anyway, I remember seeing that done back in the day.
That wasn't naked Sophitia, it was the secret ending (that all versions had) and Sophitia had a bathing suit. You could even play with her on the game as the character named "Sophitia!!" after you got all the weapons.
I still didnt see the white dress, or the 3 sided staff.
