My husband and I just made this soup for dinner. It was fantastic! We bought navy beans in the bag & did a quick soak, then rinsed the beans. I filled a new pot of water and simmered the beans for 2 hours. We are plant-based dieters and do not include oil in our diet so we simply sauteed the onions in a good non-stick pan without any oil and added the garlic after the onions softened. Since we do not eat dairy, we added about 1/8 cup of nutritional yeast for a cheesy flavor. Loved it!
Especially appreciated the part about pressure cooking beans. Didn't know it only takes 9 for soaked and 30 for unsoaked beans to cook. Had my first meal of white beans and kale and loved it! Thanks...
Truth is I probably wont make this because I don't (yet) have a pressure cooker and cooking without one would be way more time I would want to put into this dish BUT I love your editing skills!
Yumm looks fabulous and delicious. I would have added those dry herbs earlier to let them really moisten and mellow out. Will definately try this soon! Thanks so much !
My partner and I cook the same types of foods. We grow our own vegetables as well and are both vegetarians. You can't go wrong with a hearty bowl of bean soup with a nice homemade pesto on top. I like to drizzle a little olive oil on top as well. A nice slice of homemade bread and a glass of wine. Yummy. I like the suggestion of using left over beans to make a paste. I've done this before and I've also made veggie burgers using left over beans.
