I forgot that i addressed this situation. It must have been some time ago.
Anyway, I would be happy to address your system for consideration, However, let me add something here. I do not knock the three machine requirement,! BUT, there are better ways with which to portion those pieces with just as much accuracy where the portions are completely separate.
As for types of pastry, this is generally addressed by the type of pie in the process that is adjusted to fit an automatic operation.
@david123188 Remember that in the video's which are basic demonstrations there's only one person manning that process. In a production environment each process & machine will be staffed by someone. That provides the seamless production; So therefore every time one pie base gets blocked up which only takes a total of about 2,5 - 3,5 seconds, there is in fact a complete pie being made.Our video's I agree do not show the true potential of our machines. New video's are being done & will be uploaded

There are other manufacturers that automate these procedures. One such manufacturer is J. Hunts. But if you must demo this operation i would strongly suggest that you at least present a better style of operation. consult a real baker
We will have complete production video's up in the new year where you can see the complete system producing. This video is to show the basics, we are not only better priced than JH but our system is also customizable to individual needs. Our system produces complete pies in 3 second/ pie. The object of our system is not to eradicate labour, but to integrate it in such a way that they produce & do so consistently without product reject. Our system is also cold which is the key.
On the contrary. Having 3 machines each taking care of multiple processes which they do, is far more cost effective than one. Also & most important is the fact that pastry itself is a difficult variable & as a result there is no single production line in the world that can balance this variable which works equaly well with all pastry types. Our system does, & its the fact that our process or production line is broken down into individual machines that makes that possible.
@NEUMOBIKE I am very familiar with lean manufacturing. We have for many reasons taken a different approach in our design. I admit our video's unfortunately don't show the versatile & show all the reasons why we adopted the specific approach in our designs. With our new website now running but not yet completed, as its a work in progress & process. God willing by the new year we would be launching all new innovations that further enhance production.
