I don't understand why there's idiots asking why it doesn't melt. Because you put it back in the freezer TWICE before coating it in the crumbly stuff and frying it. Freezes it solid, keeps it from completely melting when it's fried. It will still melt a bit, but not a whole lot if you're quick.
