You have the delicate and well honed hand of a chef, it's quite easy to see in the way you move your wrist. Also, that's a rather interesting choice using congac. I'm going to have to try that, i usually use some dry cherry when i prep lobster.

1. Fry itfor approx 6-7 mins until the shells start to go a bit red
2. After adding liquid, cook it until flesh is cooked- usually approx 6-7mins

A little oyster sauce and a bit of congac. The lobster is very sweet and fresh and therefore you don't want flavours that are too overpowering.
