  • I usually like Vahchef, but I am extremely displeased with this recipe. To me, the best sambar is the authentic south Kerala sambar with NO COCONUT anything and no garam masala spices, i.e. no cinnamon or cloves. And NO SUGAR. Yuck. Sambar is supposed to be tangy and tart.

    I tried your sambar recipe and it was delicious.

  • we don't add garlic and ginger in Sambar. Sambar masala generally can be made earlier and stored. No need whole garam masala also. If you need we may add a fresh ground coriander red chilies and channa roasted and ground with coconut . This is only a suggestion.Curry leaves are essential.

  • @vsvraghavan We don't add ginger, garlic or garam masala either. We add urad dal to the masala which I think he did not. His recipe is different and definitely worth a try.

  • grind the masala powder and add to mixture separately dont grind them totally in mixture.

  • @Belasyed - It is part of main course (south Indian food). It is taken with white rice or dosa or idli.

  • all your recipes are easy to ok for me to follow but too many ingredients went into this sambhar it might be just too spicy for a soupy dish ........ maybe its for a really big quantity, since u dont mention any quantities its a bit hard to figure how much u r giving the recipe for .......

    I live in a country where only whole green moong daal is available.

  • I loved the recipe .. but d problem is .. U use a lot of oil in the preparation and i tend to use as less as i can .. Can u suggest if it wud maintain the same taste in lesser oil also ???

  • @nupurmk Nupurmk, obviously if you use less oil it will not be as rich. But still not that huge of a deal. Just adjust it to your preferences, there is no precise way to make sambar. Use less oil, then maybe add some coconut cream to make up for it, it's probably going to be a healthier fat than the oil being used. I always use that thick and rich coconut milk can from Thailand in my sambar for an awesome taste.

    Hey Thanx fr replying...I tried the recipe and it was soo gud .. Thnx again. There was a slight problem, it was a bit sour . May b i cud not estimate the amount of Tamarind paste. I am in England and it seems vague to get fresh tamarind here , so i jus used the wet tamarind and made a paste with warm water, kept ot for 2 hrs. Would u plz suggest me if i cud do somthing else with it. .. to lessen this khatta taste. Anywaz, thnx again for replying , m so pleased...

  • @nupurmk Hmm no problem for me, i love my sambhar SUPER sour :D. What I can tell you, is when cooking anything and controlling aspects like saltiness, sourness, sweetness, and spiciness: Start small. Don't add the whole thing what you plan in one shot. Add 1/3rd of what you plan. Cook. Taste. Add next 1/3rd of whatever you feel needs increasing. Cook longer. Taste again. Keep repeating this until you have perfect balance. It's hard to fix when you add too much, but easy to fix if too little.

  • @arhifaith Just eyeball it. Study proportions. Make an educated guess.The video quality is usually always very good, you can clearly see how much he gives. I made dozens of his recipes, and always comes out awesome. It's not as big of a deal as you make it. Just copy him, it will turn out fine, don't worry so much about that.

  • @05mmal store it in a plastic box in the fridge. Use it the next day.. else throw it. Coconut cannot be stored in for long..

  • Roast all the ingedients on a slow flame: red chili, coriender seeds, pepper corns, methi seeds(fenugreek), chana dal, rice, cumin seeds, wole garam masala, mustard seeds. Put in blender. Pour oil in pan, add hing , add garlic, ginger, curry leaves, tumeric pdr, coconut pdr stirring.. Add tomato but no need to cook. Put all in blender, add water and make a fine paste.
