well the story of that is that when laura first meets almanzo, eliza jane introduces him and she calls him "manny" and laura accidentally says "manly" instead, so it sticks. Later in the episode, he's giving her a ride and they start talking about her nickname "half-pint" and laura begins to think that it's too childish. Almanzo asks her what her full name is, which is Laura Elizabeth Ingalls, so he decides to call her "beth". The episode is the very first one in season 6: Back to School
