It is called "pate." I don't really know what French dish is like, but it is made like a real French pate according to the chef.

500 g pork's(pig) flesh (spinal column, point(headland) or net) 300 g flesh of calf(veal) (cutlet or shoulder)
2 coffee spoons of salt 1 coffee spoon of pepper 1 coffee spoon of sugar 1/2 coffee spoon of nutmeg 1 rather big shallot 1 onion
Bouquet garni with thyme, laurel and parsley 6/8 coffee spoons of cognac 2 eggs the next day
Dough way Grandma Claire:

15 g of salt
1 spoon of oil 1/4 l of water or milk
