By the way, does Psyqhical crouch/jump/has all possible attack animations? I like when bosses have all this, and not just a bunch of cheap special moves...
Unffortunently not. Psyqhicaly can't jump for some reason, or crouch, so he doesn't utilize all those attack features. Some of the bosses in the game though, don't have crouch animations but can still preform crouching/down button-like moves (example: Original Zero).
KoF Memorial is actually a fan made game. It's currently in it's 1.0 version, and can be downloaded from the Memorial Team's site (you must be registered to download though). The final version is still under way, and looks to have around 135 playable characters.

Question: Does that Projectile counter only work once or can you use it multiple times (Like against multiple projectiles - Think Rare Akuma)?

I think it actually might. The instant any projectiles touch it, they're attack is negated, and the opponent will always take damage themselves.
