You can't really jump but you can kick your legs if you hit R2... or whatever your right grab is on 360. (RT?) If you time it when your legs are on the ground while rolling you can kick yourself into the air quite a bit.
None of the other bailing maneuvers get that much air, they just make you flop around like a fish if you hit R2. =/
