No I mean there is progam like MS paint programed in there so when you shoot a wall the program reacts inside the game making bullet holes on the wall.
Jay Stelly, Robin Walker, David Sawyer & Kelly Bailey are just 4 names from the Valve crew which pioneered so much of gameplay mechanics and environments that we all take for granted these days... It's a shame these guys don't get more credit :\
You gotta remember folks he Invented this stuff in games as we know it today, this isn't just someone bragging about their designs this was and always will be Revolutionary Technology :)
I've yet to confirm this with Jay himself, but i am 99.9999% sure he is the face on the "Obsolete" icon in Hammer World Editor (Super imposed/photoshopped onto "The Fonz"'s body with the thumbs up)

No, it's nothing like MS Paint.
It's called decals, they overlay a bullet hole texture without modifying the underlying texture. You should just look it up on Google.

How do they get the wall textures to change when I shoot it. Also the blood looks cooler and more realistic in the beta release.

Half-Life was buggy since they added skeletal animations and such, which wasn't fully finished when they recorded the videos.

I gathered the videos arent from a final version, although all 3D games at the time would use skeletal animation for the models.

if you look at the headcrabs at the end they look kind of... glitchy? they shudder around like its an online game with 400ms ping
