They can't have the real international jerseys because they have to spend enough money on getting NHL jerseys and other leagues let alone international.
Honestly, I think the reason why no one added EVERY jersey for all the teams is because there's too many. They'd have to code in every jersey style from all 30 teams and the defunct teams they evolved from? Toronto alone has too many to count (Or maybe that's just Toronto and Montreal...) Anyway, some of them (like the early Phoenix jerseys) are ugly as sin. If you have too many jerseys, some wouldn't get used and it'd be pointless to have hundreds of jerseys if you'd just use one or two styles.

there's a reason why the national team jerseys aren't real. EA sports can't reach an agreement with NIKE to put them in the game. they do have an agreement with reebok, ccm, warrior, etc. to have their equipment.
I want to see goalies aloud to tuck their jersey's in, most goalies in the nhl have there jerseys tucked. It looks so gay when they don't have them tucked.

EA Sports would need to buy out Winter classic mode from 2k to get winter classic mode on NHL 12 and because it is so popular among 2k fans, they would never give it up. I like most of the things on your list though.
