to push down so hard on the coffee with the tamper. one quick put with a good quality metal technik tamper with a metal handle will do the job. I didn't taste the coffee so I couldn't comment on the quality. but I bet it was poor simply as he also doesn't wash his portafilter properly. take out the filter from the head and give it a good rinst with a sponge and detergent. it should then be let to dry upside down. this is by far the worst coffee making video on youtube. period.
@recruitmentch oh you were finished? Then allow me to retort.
1. I tapped the portafilter prior to tamping. This will not make cracks in the puck because the puck is not yet formed.
2. I do this to slightly increase the dose. Through trial and error I have found this is the best way. Using less coffee and grinding finer does not achieve as good a result
3. I do not tap the portafilter with the tamper.
4. 30 bars of pressure?!?! You obviously don't know what you are talking about....
....this is 435 pounds per square inch. Do you mean 30lb? This is approximately 13kg, which is equivalent to leaning hard on the tamper. And yes, I've measured it with a set of scales.
5. I do rinse the portafilter and leave it to dry upside down. Using detergent is unnecessary.
You're definitely NOT supposed to wash the portafilter on a regular basis, much less using detergent. That should never happen.
30 bars of pressure? WTF are you talking about?
also "studies have proven" give me a fucking break. Are you going to sit there with a straight face and say there have been legitimate studies on this issue? please. Some hobbyist with a coffee machine sharing his opinion is not a study.
guys you will learn nothing from this video apart from atrocious espresso making techniques, awful fashion sense (unless you think you are a pimp) and terrible language. to comment constructively on the coffee - firstly you should never ever tap the portafilter head onto any surface. nor should you tap it on the sides with the tamper. studies have proven that this will cause cracks in the coffee. secondly, buy yourself a good quality tamper that applies 30 bars of pressure. you do not need...
@matserdingud glad you enjoyed the video. Yes you're correct it's an MC2 auto-probably you've figured it out by now but if not, you'll need to experiment a bit to get the correct grind. See how it goes first of all, and if the coffee is gushing out really fast then turn the knob several times tighter. Try again and repeat until the coffee barely comes out at all. Then move the knob a bit coarser and then you should be getting the right consistency.
I am Gaggia newbie and I have a question regarding expresso baskets. Is the issued (smaller) basket designed to facilitate 1 (measured spoon) scoop or 2? Same with the (larger) expresso basket, is it a 2 shot or a 3?
@PoshMop The smaller basket is for a single shot. I daresay it's approximately 1 scoop of coffee, however I never use the single basket because it's more difficult to get a good result. The bottomless portafilter which I use came with a triple basket. I quite like using this one, it requires 2 heaped scoops of beans (before grinding) to fill it.
Thanks for this vid Matt. First watched it 3 months ago when I got my machine, and I still think it's a great tutorial for new owners. Initially I thought the paperclip thing was pointless, but a few weeks back I started using WDT direcly in the basked after dosing, using a piece of guitar string, and the improvement was dramatic. No more early blonding. Anyway, cheers for a good vid.
You said that shot was fast ? It looked pretty good in the end.
I just got a gaggia classic but the thermostat is dead and I'm waiting for a replacement. This video is killing me because I want to pour a good shot like that and enjoy it !!!
Thanks for the vid.
But neeway2000 is right. Button up "for fuck's sake", not many girls will be watching an espresso video on youtube...... lol !!!
Oh, and one other thing: What's the point in stirring the grounds to break the clumps when you tamp them anyway? Before brewing, there will be one big clump in your poratfilter, so to speak. Stirring won't do no harm, but it won't help either ... it's kind of unnecessary trouble.
@DemRobertSeinAccount Its an adaptation of the Weiss Distribution Technique, which aims to avoid channelling. Do an internet search and read the blurb it's quite interesting ;-)
Actually, you've got one thing wrong there: If you keep the water in the boiler for too long, it doesn't get cold but too hot (thus, it will burn your grounds). By letting water run through the shower before pulling the shot, the boiler will get fresh, cold water, the theromstat will pop on to heat it and as soon as that is done, the water will have the right temperature. In other words: You did everything correctly, but your explanation was not quite right ;)
That was the funniest review on a coffee machine yet. Love the posh accent. I don"t generally like to hear the F word in a review but I think posh and swearing go together and it was a very nice presentation of tasting the coffee at the end. Keep up the antics and I'm sure you will have lots of followers.

@matserdingud it was 30lb of pressure. as for the study, you obviously don't work in the coffee business. I will send a link to you in your inbox.

@recruitmentch As people may have guessed, the troll never sent me any link to anything.

Dear Riddley's Coffee hour.
It just occurred to me that we both own the same Gaggia machine, Grinder (it looks like an mc2 auto?) and portafilter!
I was curious as to what grind setting you use on the grinder? this may help me save some time dialing it in when I get cracking on my new setup.
Best regards. By the way I nearly shat my pants laughing with the "fuck me, that is super serial." comment at the end.

I switch my Gaggia right on now, because I want a coffee now!!! And it is only Your fault.....
I think You grind Your coffee a little bit to coarse, because it needs so hard tamping. Finally, Your result looks good, and I hope will tastes good.

Where did you buy this bottomless portafilter (size)?

@zappc happydonkey.co.uk-the standard gaggia classic size. Very good, helpful company, highly recommended. I also got my grinder from them!

funny video. you should have a finer grind, the extraction was too fast... also the language used does not really fit to coffee making :) :) :)
