@canigetout You can use white paper, a middle-gray card, or something that is black. White is just easy because it's usually on site, like a white wall.
He keeps saying his white balance is already set to custom when it is set to AWB or auto. If it had been set to custom the icon for custom white balance would have been next to the white balance in the menu istead of AWB. I bought some photovision calibration targets and they work great!

I think a more useful demonstration would have been to shoot the white card under a strongly shifted light, show that it's color cast, actually do the custom white balance operation, then take another shot of the white card and show that it comes out white..
Correction to the above comment; If using a Speedlite you have to WB with it, or the images will be strong blue. If you're going to use bounce flash, WB with that b/c whatever you bounce off of will add its own color cast as well.
Just a simple white flash-card works for this, when on the feild shooting, put the paper infront of the camera before you take your shot and shoot the whitebalance custom image. After that youll have perfect lighting coloration!
Though gray might work, white may reflect the color temp into the camera more accurately. Cameras all differ so try it on your camera both ways to see.

Well i have a gray one-side and white otherside card ... but when i took the White blance .. did the flash must be off ? 580 EXII also ??

Its best to shoot without the flash.
