After you have folded it and gone all the wy down on it shut the valve, open it up, and start at the end opposite the valve and do it again. When you get down to the valve you'll have a little bubble of air. Open the valve and push the air out.

A guy at REI showed me this and he got it back into the plastic it came wrapped in!
