@Eyedunno This is the very first episode of Bizarre foods. So he hasn't been at it for years like he has been in the later episodes. Plus he's trying to give Americans (people who usually don't eat this stuff) a look into the food we'd find weird.

Plus some people just like some things better than others. I can eat enough Sushi to make myself puke and love every bit of it, but if I eat a bit of fatty skin on a chicken leg, I feel like I'm going to get sick. Dunno why, it's just how my body is.

I think the editors were looking for weird expressions, cuz eating this stuff is normal in Japan (unlike the frog, the turtle, the lizard, and the bloody sake, and even unlike the fugu, which is not exactly weird, but which is very expensive). There's no good reason for the Japanese guy to be grossed out.
