This show is fabulous!!! Great concept, love Francis and the Chef and the narrator/camera man is also fantastic. I'm recomending this show to all my friends, I'm finally learning how to cook authentic Japanese food at home. This show is better than any of the "celebrity chef" shows on TV, no hype, no obnoxious behavior and that "Cheffy" attitude that cooking is on the same level as brain surgery. @YamixYumexHikari1054 When you cook alcohol beverages, the actual alcohol burns out, and you're left with the taste. It's just flavoring. Now I HAVE seen on a Korean cooker's channel she said you can substitute the wine or sake with water. Though sometimes I've seen recipes where you can just exclude it without replacing it with water. Just try it out and see if you like it.

This is some crazy good stuff. I bought a japaese import microwavable gyudon bowl a few years ago and I couldnt believe how good this stuff tasted. The store stopped selling it because I was the only person buying so I learned to make it myself. I could eat this everyday. lol. I eat it almost everyday. The hardest part used to be finding bonito flakes to make the dashi
@davidtj91 hon-mirin is a coondiment usually and commonly used in Japanese cuisine, is kinda like sake (is NOT sake) but sweeter and with less alcohol.
@davidtj91 Hon-mirin specifically is alcoholic mirin (they also make non-alcoholic mirin). Mirin is syrupy and sweet rice wine used for flavoring and glazes.
Sake and hon-mirin are easy enough to find. Sake is often just called "rice wine" and hon-mirin is called "rice wine vinegar". Both should be quite easy to find in your local white supermarket. ;)
Hi, I am Japanese. You may use white wine instead of sake, and you might be able to use white wine with sugar instead of Hon-Mirin because Hon-Mirin sometimes translated as sweetened sake. We sometimes alternate Mirin and sake + sugar in our japanease receipe. Good luck in your kitchen!!
Probably, you can find sake and mirin if there is a big supermarket around your area. However, I think that the most difficult thing to find in the US is Japanese soup stock that you add when you make the Gyudon soup. It is crucial to enhance the taste of this receipe.

Haha mine looked no way near as neat as this, and I just cracked an egg on top when it was done, it tasted so awesome! Definitely recommend this for a first timer. I want to try something more difficult now!
@gottaloveanime I will assume you are asking what you can replace the dashi and mirin with. If so, you can replace the mirin with sake and dashi with any stock (beef/chicken/veg) BUT, I will tell you the taste will be completely different than if you were to use those items. I suggest watching the ozoni soup video for making dashi so you can use it in this recipe.

Went to asian store and got beef. It said "Shoulder fat beef" thin siced and has fat like beef on this video and it doesn't look like brisket. I bet it's higher part of shoulder meat...

I am SO grateful to the Cooking With Dog team for setting up all these videos. Learned so many proper cooking techniques, which most cooking videos don't even bother to show. Oh, and YES, I love this Gyudon dish. I now make this and Agedashi Tofu on a regular basis. Yummy!!!!

i LOVE most of your video recipes, but in my culture and in classic french culinary technique, it's a major "No No!" to submerge any red meats in water unless you are eating or drinking it, you are basically rinsing the meat of all it's flavor, only justifiable by making a soup or stew, i find absolutely no logic behind what you trying to achieve by doing so, why no just cook the sliced beef in the flavored liquid??
@kikitoStamatis I agree with you. It really can reduce the flavor of the meat if boiling it on water. But the video says that it is to remove excess fat. I guess japanese cooking focuses on lean cooking when it comes to beef. But their fish and sushi is just heavenly! Gotta give them props to that. :)

the college i went made this in there cafe they hade next to their bookstore well it was a fourm of gyudon it was the meat over white rice but it was great i bought it all the time they also made katsudon
For those in the US who can't find thinly sliced beef in the meat case: use Steak-ems (don't boil them, cook them in the shallow pan before you make the sauce then add them back near the end). Gyudon is meant to be fast food so I don't bother with partially freezing and shaving a real steak.
@migencluz I was about to say there are R's and L's. I'm currently studying japanese.. The R's and L's are used as the same character but with different sound. But yeah.. shineelover 16 is right, it is ARIGATOU.
@lunamiz101 sadly, there are no L's in japanese. in fact, my name, miguel, is migeru in japanese. trivia... japanese people find it hard to pronounce the L sound so it simply doesn't exist in their language.

the college i went made this in there cafe they hade next to their bookstore well it was a fourm of gyudon it was the meat over white rice but it was great i bought it all the time they also made katsudon

For those in the US who can't find thinly sliced beef in the meat case: use Steak-ems (don't boil them, cook them in the shallow pan before you make the sauce then add them back near the end). Gyudon is meant to be fast food so I don't bother with partially freezing and shaving a real steak.

@migencluz I was about to say there are R's and L's. I'm currently studying japanese.. The R's and L's are used as the same character but with different sound. But yeah.. shineelover 16 is right, it is ARIGATOU.

@lunamiz101 sadly, there are no L's in japanese. in fact, my name, miguel, is migeru in japanese. trivia... japanese people find it hard to pronounce the L sound so it simply doesn't exist in their language.
