I honestly cannot understand the comments to this video stating that this isn't cooking at that it's laughable. First of all, YES, it is in fact cooking; it's called presentation, and visuals are just as important as taste. Second of all, why is a creative use of the entire table as a plate laughable? I honestly cannot see why the fact that no actual plates are present makes this a waste or making the dish overpriced. Do you pay for the dish or do you pay for it to be on a plate?
@ChallengeDK presentation?!?!? if that was on a plate would you pay the same price? doubt it. I like Achatz and I respect him for EVERYTHING he has been through, however, this is a sloppy dish, the spoon drips and smears are fine but that crushed up freeze dried mousse destroys it.. makes the dish look like someone who enjoys cooking at home but has no formal training would present this dish.
Duh66...I've seen videos of the other creations from the kitchen here and they are quite artful and inventive. This "creation" is no better than a very expensive ice cream sundae. If you mix enough junk together, you'll eventually have a flavor for everyone. This one looks like a mess, too. I think the Emperor has no clothes on this particular table top explosion.
@BeanieandCecil You're acting like the ingredients are really just random with no thought when a little insight can reveal how clever the dish really is. Presentation aside, there's only three main flavor profiles at hand: fruit/tart with the blueberries in their various forms, cream/rich with the mousse and ice cream, and earthy with maple and tobacco. The cool part is that each element is diversified in terms of textures.
And I think they're going to use spoons on it, lol.
Molecular cuisine is unorthodox, to be sure, but believe me, once you've tried it you can appreciate where the Chefs are coming from with their creations. Also, the ingredients on the table match up perfectly however odd the combinations may appear.
I have an idea. I'll just empty my fridge across this table top and charge the guests 50 bucks a piece for the honor. I titled my masterpiece, "Look What the Dog Just Left Me." Do you eat it with a spatula, hands or are we supposed to just admire it and praise the chef as one would a child that brings home a new finger painting?
Absolutely incredible. I would kill for ten minutes in a kitchen with him. Genius.
