If you have watched the recent episodes of Bleach you will know that Aizon started Arrancar about 100 years ago so there were Espadas before, but not as powerful as the current ones, as they resemble more like Shinigami. It twists them into that form where they attack other souls or living people to fill the void their descent caused. Arrancar are basically evolved hollows, and can theoretically resist such base impulses, though still trapped in their corrupted form.
