my attention was diverted by the above comment about "jew bacon". at first i thought it was some ignorant, archaic southern speak, but now i am thinking that the writer means kosher bacon made from beef or lamb.
I'm with you Beth! I don't prefer green beans. When my grandma made them she used salted pork chunks and pearl onions! TFS anyways! Granny always makes me smile.
mom makes them with a lil jew bacon, onions and some sugar and lets them cook down in the water from the cans.
so if 2 cans. she drains one and uses the other. with just alittle sugar ,less than a half. and the bacon and onion in there. and lets it cook til the water is almost gone. They are pretty good.
@BigBoyG1 nope, never tried it. I dislike green beans, but will pass on the recipe to her ... she is diabetic, so she will probably dismiss it right off the bat :(
@CookingAndCrafting You can use Splenda instead of regular sugar. Mom is diabetic too. Its just something you have once in a while. Due to my recent doc visit. I have been doing away all things sweet too. Even though I'm not diabetic. Just trying to keep it that way. But all and all they are pretty good.
Great but simple recipe. My dad always grew his own green beans which were the 36 inch or Yard Long Chinese variety and so tasty Didn't take but a few beans per person Lol. He used pancetta which is just overpriced Italian bacon but I prefer real bacon. Cheaper the better
@MysticLight174 hmm. If I can modify it to be a very small batch, I will try. Small family = not gonna be eaten much = goes to waste = something Beth tries never to do. Too ghetto to let things go to waste
@anmoose Lots more fat apparently lol! I thought it was funny when she was telling that to my auntie--absolutely CLUELESS that she was using almost virtually no fat with that sort of bacon
this is so close to how we have always eaten them in my family, only difference is we use garlic instead of onion and we add red wine vinegar or balsamic and sometimes a little Parmesan cheese.
@croutoncrackerjacks I am not a fan of the green beans, but maybe I should have tried this dish. I can stand them if they are thrown into a stir fry because they are few and far between. But when concentrated like this in a dish? Yeah, I kinda pass
That looks so good! Have you ever tried Green Bean Almondine? You could use the same package of greens beans used in your vid. Melt 2 tbsp butter in a pan add slivered almonds(about 2 tbsp but I use more) cook until golden on low heat. Add tsp lemon juice and pour over cooked green beans. This is my fave veggie to make for Thanksgiving other than the sweet potatoes.
@ladygladys I'm not a fan of green beans at all. So mother is alone when she makes them. I will definitely pass this recipe on to her so she can enjoy your recipe, thank you!
hahaha your mum has such an excited awesome voice when she speaks :P So cute the vids made with you two! hope you had a good nye with fam! beans looked delicious

Now there's a quickie. I agree with Mom; needs more animal fat. Green beans somehow just demand bacon grease.
