Basically, Henry refuses to accept Katherine's gift, because he is trying to prove to her that e no longer cares for her and that she was never his 'true' life because he believes her marriage to his brother, Arthur, was indeed consummated, which she denies time and time again.

He is with Anne, and she has been promised that she will be queen, and that Katherine will be put aside. It is because she will be Queen that she agrees to sleep with him (and of S.1) because she refuses to be overly intimate with him 'for fear she will be labeled a whore' because she is unmarried, and yet sleeping with the king. She does it to 'protect her virtue' (So she convinces Henry) and will only be his if he is hers alone. So he willingly puts aside Katherine in Anne's favor.

The court musicians are playing "Greensleeves" though although the song is not found in written records until the late 16th Century-decades after Henry's and Anne's death. Also the music style is not of that era but the late 16th Century-early 17th Century. :)
