I was taught that I can just put a clean pinky in the yogurt and when I can chant one Maha Mantra, Hare Krishna Hare KRishna KRishna KRishna Hare Hare, Hare Rama Hare Rama Rama Rama Hare Hare with my finger in the yogurt for no longer or shorter than one mantra then the temperature is just right. :)

I would add the flavoring (vanilla, maple syrup, fruit syrups) at the time of adding the culture.
