  • Nice! I searched "ginger bok choy" and this is the first vid that came up. Very short and to the point. Thanks! Gonna try it tonight, and plan on throwing in some chicken for protein, but otherwise a nice vegetarian dish. Probably would work well with tofu, also.

  • Can you freeze,and store bok choy ? Obviously fresh is better,but I like to buy vegetables for spare of the moment idea I may have and thought I would try bok Choy for the first time. Anyone ? Chef John ?

  • try adding the garlic first after heating the pan. let the garlic flavor out and keep stirring. dont let your garlic get burned

  • Nice recipe. This is a traditional Asian way of stir-frying bok choy. It's not at all western, where we overcook our veggies and deplete them of their nutrients like we do everything else we come in contact with. Surprising how much we can learn from people in other countries.

  • I just made this w/o red hot pepper, not bad.

    I like MoarUtfoo's suggestion of using fish sauce in lieu of sesame oil - 'salty' rather than smokey.

  • I made this recipe, with the following differences:

    -No ginger because I'm allergic to it.

    -10 drops of fish sauce, I had no sesame oil.

    -1 serrano pepper instead of red pepper flakes.

    -A little salt at the start to sweat.

    The serrano was surprisingly not hot so I added some red pepper flakes at after cooking.

    Separating stems from leaves preserves some of the mustardy taste in the leaves. Red peppers are a great compliment and contrasting color.

  • Fabulous. Thanks for the great ideas. Many will also appreciate to know that bok choy is one of the most nutrient dense and healthy foods along with kale, collards, spinach, romaine & other dark leafs. Your quick cooking also preserves the nutrients better.
