  • @SebbeSucksBawlz if you bought them fresh from a fishmonger, then yeah they should be alive. But a lot of commercial mussels (the sort which are vacuum sealed), have been frozen and thawed during transit, so those ones aren't alive

  • I love mussels. I cook something really similar to this and it's fucking amazing. Don't forget to pour the sauce over the mussels though, and soak it up with crusty bread.

  • @steph2226 You can, but mussels (or mossels as we say in Dutch) are best when fresh. If you only get to taste the frozen ones your kind of missing how a mussel really tastes like.

  • How is it with wines and cooking? i get that u go for a dry one but does a expensive wine give a better result than a semi good?

  • @Joyl3ss Nope. Price ain't got nothing to do with the quality of wine. Its a personal preference.

  • @Joyl3ss A dry wine is important when steaming mussels. You don't need to use very expensive wine but don't use super cheap plonk either. You don't need to use much wine or you won't taste the mussel juices in the broth, which is perfect with some nice crusty bread.

  • My main concern is: how do you make sure than all of the tomatoes and onions and whatnot get INTO the mussels when he cooks them for only about 1 minute? Does the steam really carry the flavor that fast and deeply?

    no actually, you should let them cook for around 10 minutes... Mussels also take more than one minute to open up... ;-)

    and I asked a friend of mine two weeks ago, which is a professionnal cook, and he also said the same ;-)

  • @IcyPhoenixOfMist depends on the heat, but if your liquid is steaming (probably over 170 180 F) it shouldn't take more than 5 minutes. anything more is overkill.

    I ate mussels with white wine sauce in a very small casserole.

    It was so delicious. I think the white wine sauce was a Beurre Blanc sauce.

    I remember ordering mussels in Cyprus and getting about 6 massive ones.. whereas with the Scottish mussels in the UK, you need a few dozen for a good meal.
